Ayinde Howell is a life long vegan, restaurant trained chef and green entrepreneur he opened his first cafe in Seattle at age 20 to critical acclaim. He recently launched the popular food and lifestyle blog ieatgrass(dot)com. His last post was in Manhattan at the world renowned Jivamukti Yoga School as the Executive Chef where he created the existing menu. His past work includes founding the first of a small chain of vegan restaurants and cafes in Seattle owned by his family business Hillside Quickie Inc. Ayinde's recipes have been featured in The New York Times, his work has been featured in Timeout New York, The Seattle Times, BET’s 106 & Park, and Marcus Samuelson's FoodRepublic.com and more.

Open for just over a year, Eddie's restaurant, Baohaus, has received critical acclaim and coverage from the New York Times, Time Magazine, The New York Post, New York Magazine, Serious Eats, Time Out New York, The Tasting Table, CNN, The New York Observer, Cooking Channel, Food Network, Village Voice and many more. The closest Eddie came to “formal” cooking training was from his mother. Influenced by her style, he developed his own unique recipes and techniques by eating out, taking notes and recreating dishes at home. He believes that everyone has three cooking classes-a-day: Breakfast, Lunch, Dinner. He is a culinary outsider who became an insider by creating his own opportunities.

Chef RJ Cooper is the Chef/Owner of Rogue 24, a 52-seat urban fine dining restaurant, set to open in Washington, DC in Spring 2011. At LTO, Cooper and his team of culinary artisans will debut the menu to be featured at Rogue 24, highlighted by a unique 24-course tasting menu experience.

Cooper honed his craft working at The Ritz Carlton Atlanta, Brasserie LeCoze, and with Eric Ripert at Le Bernardin. He served as Chef de Cuisine at Vidalia, an award-winning southern fine dining restaurant in Washington, DC from 2004 to 2010. Vidalia received accolades including a three-star rating by Tom Sietsema, Food Critic for The Washington Post, inclusion amongst the top 10 restaurants in Washingtonian magazine’s 100 Very Best Restaurant issue. In 2006, Cooper received the Rising Star Chef award from Star Chefs, and in 2007 he won the prestigious James Beard Foundation Award for Best Chef Mid-Atlantic.
